End the evening with dinner at Bliss, a French-Caribbean restaurant where the menu includes shrimp flambéed with aged rum, and pork medallions in a coffee-and-orange-zest sauce (829/865-6444, entrées from $8). A taxi from Sun Village to Cabarete costs $90 round trip.
